With a protected designation of origin, this is a ripened cheese with a slightly buttery, yellow and deformable texture which can also be rough and somewhat brittle when the process of ripening is longer. In the latter case, in which the product is called old Castelo Branco cheese, it has a strong and slightly spicy taste. You can find both types in the Castelo Branco, Fundão and Idanha-a-Nova municipalities.
