Since the year 2000, wine experts in Portugal were intrigued by a white vine variety, Síria - which is in fact one the most important white vine varieties in Beira Interior wine region - that generated salmon-coloured wines, specifically in the sub-region of Castelo Rodrigo. What at first looked like a mystery was later explained by wine-maker Jenny Silva. Pinking is the name of this fascinating wine category. Unique in the world.
In 2014, Jenny Silva presented her master's degree thesis on this intriguing phenomenon. She concluded that the pinking process was the result of a natural phenomenon that converted wines produced with white wine varieties, especially Síria, in salmon-pink wines, This is explained by several factors, namely: weather conditions and the average temperature in the first days of October which is the last stage of white grape ripening in the region of Castelo Rodrigo, as well as new wine-making technology applied to the production of white wines. Pinking is, in fact, the only wine in the world that presents a salmon-pink colour in the final wine, despite being produced with white grapes.
